Muxgo (Las Palmas de Gran Canaria)

Poemas by Hermanos Padrón (Las Palmas de Gran Canaria)
Combining technique and creativity while preserving island flavors, Poemas operates under the guidance of the Padrón brothers – considered by many (including myself) as Canarias’ finest chefs. The team of Adrián García in the kitchen and Rafa Hurtado in the dining room has successfully translated the principles of their flagship restaurant (El Rincón de Juan Carlos) into a unique culinary experience. Though closed in August for staff rest, it’s worth marking your calendar for September – summer lingers longer here.
La Aquarela (Patalavaca, Mogán)
This essential seaside destination sees chef Germán Ortega elevate island ingredients into elegant, contemporary creations. The experience is complete with sommelier Nikola Ivicic, one of Canarias’ finest, overseeing the wine program. Don’t miss their specialty menus – one vegetarian, another showcasing Mogán’s coastal seafood – compelling reasons to visit Patalavaca.
Los Guayres (Mogán)
At Hotel Cordial Mogán Playa, chef Ruyman González continues to reinterpret classic Canarian flavors with sophistication and nuance. His cuisine draws equally from Mogán’s coast and valley, translating authentic Canarian identity into haute cuisine. This approach earned them their Michelin star in 2019, which they proudly maintain today alongside La Aquarela – pioneers in Gran Canaria’s gastronomic rise.
Tabaiba (Las Palmas de Gran Canaria)
A laboratory of culinary emotions with constant nods to island recipes, Tabaiba showcases chef Abraham Ortega at his creative peak. Remarkably, it’s the only Michelin-starred restaurant in the Canaries not located in a hotel but on a vibrant street in Guanarteme, near Las Canteras Beach. His “Canarian evolutionary” cuisine honors family traditions while pushing boundaries with calculated risks that consistently pay off.
Bevir by Lopesan (special mention)
Though the original Bevir in Las Palmas closed last October, it has been reborn as Bevir by Lopesan at Hotel Lopesan Costa Meloneras Resort & Spa. Chef José Luis Espino leads the kitchen with Rogelio Tenorio, supported by an exceptional team including Diego Tornell, recently named Spain’s second-best sommelier and currently Canarias’ top wine expert. Their “all garden, all sea” philosophy remains, and I’d wager they’ll reclaim their Michelin star within the year.
